How to cook a Nigerian feast

It has been a long and busy week and I have been looking forward to Sunday as my day of rest.  I therefore should not have agreed to cook lunch for my friend before we went of to see ‘La La Land’ at the cinema. More specifically I should not have decided in my head that it was going to be a Nigerian feast.

However, I did all of those things because I was looking for a challenge.

My menu, included jellof rice and moi moi both of which I baked in the oven, copying a recipe and method that I found on line. I also fried some plantain and roasted some chicken drumsticks and thighs. Washed down with a bottle of super malt – the meal was  perfect and well the effort.
